Pistachio Brownies

Rich, fudgy brownies with a nutty pistachio twist that elevates this classic treat.

Ingredients

  • 10 tbsp unsalted butter
  • 4 oz sugar free dark chocolate chips
  • 1 tsp maple extract
  • 1 cup Whole Earth Stevia, Monk Fruit and Allulose Sweetener 
  • 2 eggs 
  • ½ cup all purpose flour 
  • ¼ cup unprocessed unsweetened cocoa powder
  • ½ tsp salt 
  • 1 1/4 cup shelled salted pistachios, divided 
  • 2 tbsp heavy whipping cream
  • ½ cup sugar free white chocolate chips 

GARNISH

  • Chopped pistachios, for garnish

Preparation

  1. Preheat the oven to 350 degrees. Spray a 9x9 baking dish with cooking spray and line with parchment paper. 
  2. In a medium saucepan over medium low heat, melt the butter. Cook until the butter is melted and some of the milk solids start to brown, about 5-7 minutes. Add in dark chocolate chips and maple extract and stir until the chocolate is melted and smooth. 
  3. Add the Stevia, Monk Fruit and Allulose sweetener and whisk until well blended. Allow to cool for a few more minutes. 
  4. Add eggs one at a time, and whisk to incorporate. 
  5. Add the flour, cocoa powder and salt and mix until just combined. 
  6. Add ¾ cup chopped pistachios to the batter. Spread in your prepared pan. 
  7. Bake brownies until a tester inserted in the center comes out clean, about 18-20 minutes. Allow to cool. 
  8. Fill a saucepan with water and bring to a boil. Add in ½ cup remaining whole pistachios, and let sit in the water for about a minute. 
  9. Remove from water and put pistachios in a small ice bath. 
  10. Transfer pistachios to a clean kitchen towel and rub vigorously to remove the skins from the nuts.
  11. Put pistachios in a food processor and pulse until broken down into small pieces. With the motor still running, add 1 tbsp water and blend until smooth. 
  12. Move the pistachio paste to a small microwave safe bowl. Add white chocolate chips and heavy cream and microwave for 20 seconds. Stir and microwave for 10 to 15 more seconds, until mixture is melted and smooth. 
  13. Spread pistachio paste over brownies and top with additional chopped pistachios.
