

Spiced Oatmeal Bars
This easy-to-follow recipe combines the rich taste of pumpkin with a comforting blend of spices, all nestled within a hearty oatmeal crust. The bars are perfect for a quick breakfast, snack, or dessert, offering a delightful balance of sweetness and spice.

Ingredients
- 1 cup whole wheat flour
- 1 cup quick cooking oats
- 2 tsp ground cinnamon
- ½ tsp. baking soda
- ¼ tsp. Salt
- ½ cup pumpkin puree
- ½ cup coconut oil - melted
- ½ cup Whole Earth Monk Fruit with Erythritol Sweetener
- 2 eggs, whisked
- 1 tsp. vanilla extract
- ½ cup chocolate chips (optional)
Preparation
- Preheat oven to 350 degrees
- Line an 8x8 baking pan with greased parchment paper and set aside
- In a medium bowl mix together flour, oats, cinnamon, baking soda and salt.
- In a large bowl, beat pumpkin, coconut oil, Whole Earth Monk Fruit with Erythritol Sweetener, eggs, and vanilla together.
- Combine dry ingredients with wet, then add in chocolate chips.
- Pour batter into prepared pan, spreading evenly.
- Bake for 16-18 minutes. Let cool completely before cutting into squares.
