Ingredients

  • 1 cup whole wheat flour
  • 1 cup quick cooking oats
  • 2 tsp ground cinnamon
  • ½ tsp. baking soda
  • ¼ tsp. Salt
  • ½ cup pumpkin puree
  • ½ cup coconut oil - melted
  • ½ cup Whole Earth Monk Fruit with Erythritol Sweetener
  • 2 eggs, whisked
  • 1 tsp. vanilla extract
  • ½ cup chocolate chips (optional)

Preparation

  1. Preheat oven to 350 degrees
  2. Line an 8x8 baking pan with greased parchment paper and set aside
  3. In a medium bowl mix together flour, oats, cinnamon, baking soda and salt.
  4. In a large bowl, beat pumpkin, coconut oil, Whole Earth Monk Fruit with Erythritol Sweetener, eggs, and vanilla together.
  5. Combine dry ingredients with wet, then add in chocolate chips.
  6. Pour batter into prepared pan, spreading evenly.
  7. Bake for 16-18 minutes. Let cool completely before cutting into squares.
