

Watermelon Margarita Pops

Makes 6 pops
Ingredients
- 3 tablespoons tequila
- 1 tablespoon water
- 6 packets Stevia and Monk Fruit Blend
- 2 rounded cups cubed watermelon, seeds and rind removed
- 1/2 teaspoon grated lime zest
- 1 tablespoon fresh lime juice
Preparation
- Combine tequila, water and Stevia Leaf & Monk Fruit, whisking until Stevia Leaf & Monk Fruit is completely dissolved.
- Place watermelon, Stevia Leaf & Monk Fruit mixture, lime zest and juice in blender container. Process until mixture is almost smooth. Pour mixture into six 2 to 3 ounce “pop” molds. Freeze several hours or overnight*. To serve, let stand at room temperature about 1 minute before unmolding.
- *To prevent icy areas in the pop, stir, using the popsicle stick after about 2 hours in the freezer.
- VARIATION: For a non-alcoholic version, use 1/4 cup of water instead of the tequila and 1 tablespoon water. Follow directions above.
