Vanilla Cupcakes

Fluffy vanilla cupcakes topped with creamy frosting and colorful sprinkles for a sweet, classic treat!

  1. Preheat the oven to 350 degrees. Fill a standard muffin tray with cupcake liners. 
  2. Beat room temperature butter at medium speed in a bowl with a stand mixer attached until creamy. Add the Whole Earth Sweetener, beating until light and fluffy.  Add eggs one at a time, blending after each addition. 
  3. In a medium bowl, sift together the flour, baking powder, baking soda and salt. Add this mixture to the butter mixture alternately with the sour cream, beginning and ending with the flour mixture. Add lemon juice and vanilla extract and beat until just combined.  
  4. Place ¼ cup batter into prepared cupcake liners. Bake for 14-16 minutes or until a toothpick inserted comes out clean. 
  5. Allow cupcakes to cool completely before frosting. 

Frosting

  1. While cupcakes are cooling, you can prep the frosting
  2. Beat 2 sticks of softened butter until smooth and creamy. Gradually add the sifted Whole Earth sweetener to the butter mixture alternately with milk. Beat in vanilla extract.  Add more milk if needed to get frosting to desired consistency. 
  3. Divide the frosting between two bowls. Add a few drops of green food coloring to one bowl and mix to blend. 
  4. Add a couple drops of pink and yellow food coloring to the second bowl and mix to achieve the peach colored frosting. 
  5. To frost cupcake- put the two frostings in piping bags fitted with tips. Pipe frosting onto cupcakes. Swap out tips for more interesting frosting decoration. Top with colorful sprinkle balls and edible beads.
