

Peanut Butter Oatmeal Cookie Sandwiches
Perfect for an afternoon snack or friends night in, these Peanut Butter Cookie Sandwiches are a delectable treat for any sweet craving or special gathering.
Makes 17-20 cookie sandwiches
Ingredients
COOKIES
- ¾ cup all-purpose flour
- ¼ tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- ¼ cup butter, softened
- ⅓ cup unsweetened peanut butter, creamy
- ½ cup Whole Earth Monk Fruit with Erythritol
- ⅓ cup Whole Earth Brown Erythritol & Allulose Baking Blend
- 1 large egg
- 1 tsp vanilla extract
- 1 cup oats, old fashioned or quick cooking
PEANUT BUTTER FILLING
- ½ cup peanut butter, creamy
- 6 tbsp butter, softened
- ½ cup Whole Earth powdered sugar alternative (*see recipe below)
- ½ tsp vanilla extract
- 1-2 tbsp milk, if needed to thin
WHOLE EARTH POWDERED SUGAR ALTERNATIVE
- 2 cups Whole Earth Monk Fruit with Erythritol
- 2 tbsp cornstarch
Preparation
COOKIES
- Preheat oven to 325 F and line baking sheets with parchment paper
- Sift together, flour, baking soda, baking powder and salt in medium sized bowl and set aside
- Beat together butter, peanut butter, and Whole Earth sweeteners together until creamy
- Scrape down sides of the bowl, add egg and vanilla until combined
- Again, scrape down the sides of the bowl and add the dry ingredients, beating on low speed, until incorporated
- Fold in oats until evenly distributed
- Use a small cookie scoop or tablespoon (5-6 oz weight), and roll into balls and place 2 inches apart
- Push down balls to be more like discs
- Bake for 5 minutes, flatten a little with flat bottom cup and rotate pan
- Bake for another 10 minutes, rotating once
- Remove from oven and lightly press meat mallet or fork to create indentations on the top and let cool
WHOLE EARTH POWDERED SUGAR ALTERNATIVE
- Place Whole Earth Monk Fruit with Erythritol and cornstarch in a high-speed blender and blend for 30 seconds or until fluffy
- Store in an air-tight container
FILLING
- While the cookies are cooling completely, prepare the filling. Beat together the peanut butter, vanilla, butter, powdered Whole Earth until well combined. Add milk if needed
- Once cookies are completely cooled, spread filling on the entire surface of one cookie. Sandwich the other cookie on top of the icing
- Repeat with remaining cookies, serve immediately or store in an airtight container
