

Coffee Cake with Orange Cinnamon Drizzle
This buttery coffee cake is topped with a crunchy crumble and finished with a warm orange cinnamon drizzle for a cozy, citrusy twist.
Yield: 1 ea 9 x 13 pan
Ingredients
For the Cake
- 2 1/4 cup flour
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp kosher salt
- 3/4 cup unsalted butter, room temp
- 1 cup Whole Earth Stevia, Monk Fruit & Allulose Blend
- 1 tbsp vanilla extract
- 3 ea eggs, room temp
- 1 cup sour cream, room temp
- 1/4 cup milk
For the Cinnamon Layer
- 1/4 cup Whole Earth Stevia, Monk Fruit & Allulose Blend
- 1 1/2 tsp cinnamon
For the Crumb Topping
- 1 cup old fashioned rolled oats
- 8 tbsp unsalted butter, cold and cubed
- 1/2 cup flour
- 1/2 cup Whole Earth Stevia, Monk Fruit & Allulose Blend
- 3/4 tsp salt
- 1/4 tsp cinnamon
- 1/8 tsp ginger, ground
- 1/4 tsp brown sugar extract (optional)
- 1/4 cup almonds, sliced
For the Orange Cinnamon Drizzle
- 3 tsp cornstarch
- 1 cup Whole Earth Stevia, Monk Fruit & Allulose Blend
- 1/2 cup milk
- 1/2 cup cream
- 1 ea cinnamon stick
- 1 ea orange, zest
- to taste kosher salt
- 1/2 tsp cinnamon
Preparation
TIMING
- Prep Time: 30 minutes
- Cook Time: 40 minutes
- Total Time: 70 minutes
- Preheat the oven to 350 degrees, and a lightly greased 9 x 13 pan, place parchment directly into the pan (with parchment up the sides of the pan), to make it easy to lift out.
- In a large bowl, whisk the flour, baking powder, baking soda, salt and set aside.
- Cream the butter and Whole Earth Sweetener in an electric mixer with the paddle for 3-4 minutes on medium-high until smooth and light.
- Scrape down the sides as needed.
- Add the vanilla and eggs one at a time until well combined. **
- Mix in sour cream.
- Once combined, add the flour mixture to the wet ingredients on low in two quick batches, until just combined.
- Finish by stirring in the milk with a spatula until combined. Do not over mix.
- This batter will be thick and will not look like you have enough-you will.
- Add half the batter into the prepared pan, and spread out evenly with a silicone spatula or a knife.
- Evenly add the cinnamon-Whole Earth Stevia, Monk Fruit & Allulose Blend layer.
- Add the remaining batter on top, and spread evenly. It can be a little tricky, but it does not have to be perfect.
- Sprinkle the streusel mixture over the top of the cake, and bake for about 35-40 minutes.
- Stick a toothpick into the center of the cake if it comes out clean, it is done.
- Let cool in the pan for at least 15 minutes.
- Lift the cake from the pan using the overhang parchment around the sides.
- Drizzle the glaze over the cake, use as much or as little as you want.
- Add a tbsp of warm water if you would like the glaze to be like a runnier.
** Note, if the mixture separates, place hot water in a large bowl and place the mixing bowl into that bowl. This will warm the mixing bowl and the mixture. Scrape down the sides. After a few minutes, hand whisk the mixture, it will come right together. If this happens, hand mix the sour cream and place back onto the electric mixer and follow the rest of the instruction.
For the Cinnamon Layer
- Whisk Whole Earth Stevia, Monk Fruit & Allulose Blend and cinnamon together to sprinkle evenly over 1/2 the batter in the pan.
For the Crumble Topping
- Combine all the ingredients in the food processor and pulse to combine.
- The mixture should resemble coarse breadcrumbs, and should clump together when squeezed.
- This crumble will get spread evenly on the top of the crumb cake.
For the Orange Cinnamon Drizzle
- Mix cornstarch with 2 tsp of water to make a slurry.
- Combine Whole Earth Sweetener, milk, cream and cornstarch slurry in a small sauce pan on medium heat, whisking constantly for about 5 minutes or until thick.
- Whenever the glaze starts to bubble at the sides of the pan, move the pan off the heat while whisking for a few seconds, so it does not hard boil.
- When thick take off heat add cinnamon stick, orange zest and salt.
- When cool add cinnamon.
- The glaze will get a little thicker as it cools, you can add a little water if it gets too thick.
