

Spiced Oatmeal Raisin Cookies
Warm and comforting, these spiced oatmeal raisin cookies blend cardamom, five spice, and sweet raisins for a perfectly delightful homemade treat.

Ingredients
- 1 cup unsalted butter
- 1 cup Whole Earth Monk Fruit with Erythritol
- ¼ cup Brown Zero Calorie Sweetener
- 2 large eggs
- 2 tsp vanilla extract
- 1 ½ cups all-purpose flour
- 1 tsp baking soda
- 1 tsp five spice blend or garam masala
- ½ tsp cardamom
- ½ tsp salt
- 3 cups old-fashioned oats
- 1 cup raisins
Preparation
- Preheat the oven to 350 degrees.
- Using a stand mixer or electric beaters, beat the butter with the sweeteners until creamy. Add the vanilla and the egg; beat on low speed until just incorporated.
- In a separate bowl, whisk together the flour, baking soda, spice blend, cardamom and salt. Add to the wet ingredients and mix until combined. Beat in the oats and raisins.
- Line 2 baking sheets with parchment paper and scoop heaping tablespoon sized balls of dough onto the sheets, placing a few inches apart. Bake for 10-12 minutes.
- Remove from the oven and transfer to a wire rack to cool.
