Spiced Oatmeal Raisin Cookies

Warm and comforting, these spiced oatmeal raisin cookies blend cardamom, five spice, and sweet raisins for a perfectly delightful homemade treat.

Ingredients

  • 1 cup unsalted butter
  • 1 cup Whole Earth Monk Fruit with Erythritol
  • ¼ cup Brown Zero Calorie Sweetener
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp five spice blend or garam masala
  • ½ tsp cardamom
  • ½ tsp salt
  • 3 cups old-fashioned oats
  • 1 cup raisins

Preparation

  1. Preheat the oven to 350 degrees.
  2. Using a stand mixer or electric beaters, beat the butter with the sweeteners until creamy. Add the vanilla and the egg; beat on low speed until just incorporated.
  3. In a separate bowl, whisk together the flour, baking soda, spice blend, cardamom and salt. Add to the wet ingredients and mix until combined. Beat in the oats and raisins.
  4. Line 2 baking sheets with parchment paper and scoop heaping tablespoon sized balls of dough onto the sheets, placing a few inches apart. Bake for 10-12 minutes.
  5. Remove from the oven and transfer to a wire rack to cool.
