Banana Blueberry Oatmeal Muffins

These breakfast muffins are the perfect way to jump-start the day.

Ingredients

  • 1-1/2 cups all-purpose flour
  • 3/4 cup uncooked quick OR old-fashioned oats
  • 1/4 cup Whole Earth Stevia Leaf, Monk Fruit & Allulose Sweetener
  • your favorite Whole Earth Sweetener Packets
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3/4 cup mashed ripe bananas (about 2 medium)
  • 1/2 cup nonfat milk
  • 3 tablespoons vegetable oil
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 cup fresh or frozen unsweetened blueberries

Preparation

  1. Preheat oven to 400°F.
  2. Combine flour, oats, Whole Earth Stevia Leaf Monk Fruit & Allulose Sweetener, baking powder and soda, cinnamon and salt in a mixing bowl. Stir in combined bananas, milk, oil, egg and vanilla just until all ingredients are moistened. Gently fold in blueberries
  3. Fill paper-lined 2-1/2-inch muffin cups almost full. Bake 17 to 19 minutes or until wooden pick inserted in center comes out clean. Cool muffins in pan on wire rack 5 minutes. Remove from pan. Serve warm or at room temperature.
