

Banana Blueberry Oatmeal Muffins
These breakfast muffins are the perfect way to jump-start the day.
Serves 12
Ingredients
- 1-1/2 cups all-purpose flour
- 3/4 cup uncooked quick OR old-fashioned oats
- 1/4 cup Whole Earth Stevia Leaf, Monk Fruit & Allulose Sweetener
- your favorite Whole Earth Sweetener Packets
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 3/4 cup mashed ripe bananas (about 2 medium)
- 1/2 cup nonfat milk
- 3 tablespoons vegetable oil
- 1 egg
- 1 teaspoon vanilla
- 1/2 cup fresh or frozen unsweetened blueberries
Preparation
- Preheat oven to 400°F.
- Combine flour, oats, Whole Earth Stevia Leaf Monk Fruit & Allulose Sweetener, baking powder and soda, cinnamon and salt in a mixing bowl. Stir in combined bananas, milk, oil, egg and vanilla just until all ingredients are moistened. Gently fold in blueberries
- Fill paper-lined 2-1/2-inch muffin cups almost full. Bake 17 to 19 minutes or until wooden pick inserted in center comes out clean. Cool muffins in pan on wire rack 5 minutes. Remove from pan. Serve warm or at room temperature.
