Turbinado sugar is a sugar cane-based, minimally processed and refined sugar. It is medium brown in color and has large crystals. It is called turbinado sugar for the “turbines”ť or centrifuges in which it is spun. Turbinado comes from the first pressing of the sugar cane. It has large crystals and retains some of the molasses flavor, which is a natural byproduct of the sugar process.
Turbinado sugar contains more moisture than regular white or brown sugars, which can be beneficial in baked items such as cookies and muffins.
